  • 6 large egg whites
  • 1/3 cup lemon juice
  • 3 sticks unsalted butter
  • 6 oz blackberries
  • 8 oz mascarpone cheese
  • 1 tsp baking powder (heaping)
  • 1 tsp kosher salt
  • 2/3 cup whole milk (room temperature)
  • 1/4 cup sour cream (room temperature)
  • 1 tbsp lemon zest
  • ¾ cup unsalted butter (room temperature)
  • 6 egg yolks
  • 1/2 cup unsalted butter (chilled)
  • 1 cup granulated sugar (for blackberry curd)
  • 3 cups confectioners sugar
  • ½ tsp orange blossom water (optional)
  • Handful of blackberries (for garnish)
  • Queen Anne’s Lace flower (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans by greasing and flouring them.
  2. In a bowl, mix together flour, sugar, baking powder, and salt. In another bowl, whisk milk, sour cream, egg whites, lemon zest, and lemon juice until smooth. Gradually combine wet and dry ingredients.
  3. Divide batter evenly between pans and bake for 30-35 minutes until a toothpick comes out clean. Cool layers for 10 minutes before transferring to a rack.
  4. Prepare blackberry curd by heating strained blackberries with sugar; mix with egg yolks and cook until thickened. Stir in chilled butter.
  5. Beat softened butter for buttercream until creamy; gradually add confectioners' sugar followed by mascarpone until smooth.
  6. Assemble the cake: Place one layer on a plate, spread with blackberry curd and buttercream, top with second layer, then frost the entire cake.
  7. Garnish with fresh blackberries before serving.
