  • 2 cups cooked chicken, diced
  • 1 (14 oz) can pineapple tidbits, drained (reserve juice)
  • 8 oz rotini or bowtie pasta
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced thin
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt & pepper until smooth.
  3. In a large bowl, combine cooled pasta with diced chicken, pineapple tidbits, red bell pepper, green onions, and shredded carrots.
  4. Drizzle dressing over the mixture and gently fold until evenly coated.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
