  • 1/2 cup Heavy Cream

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together granulated sugar and unsalted butter until light and fluffy.
  2. Add eggs one at a time, incorporating fully after each addition. Mix in espresso powder.
  3. In another bowl, whisk flour and salt; gradually add to wet mixture while mixing on low speed.
  4. Scoop dough onto parchment-lined baking sheets, roll into balls, and coat with powdered sugar before placing back on sheet.
  5. Bake for about 12 minutes until cracked but soft inside; cool slightly before transferring to wire racks.
  6. Whip heavy cream to stiff peaks and fold in mascarpone cheese until smooth.
  7. Once cookies are completely cooled, spread filling onto half the cookies and sandwich with another cookie.
