Ingredients
- 2 cups sushi rice
- 2 ½ cups water
- ¼ cup rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- 2 chicken breasts (diced)
- ¼ cup soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 avocado (sliced)
- Sesame seeds
- Fresh cilantro
- Sriracha (optional)
Instructions
- Rinse 2 cups of sushi rice under cold water until clear. Cook with 2 ½ cups water in a rice cooker or pot according to instructions.
- In a mixing bowl, combine ¼ cup soy sauce, 2 tbsp honey, and 1 tbsp sesame oil. Add diced chicken and marinate for at least 10 minutes.
- Heat a skillet over medium heat and cook the marinated chicken for about 8–10 minutes until caramelized and cooked through.
- In a mixing bowl, add cooked rice and mix in ¼ cup rice vinegar, 1 tbsp sugar, and 1 tsp salt.
- Layer the sushi rice, sliced avocado, and teriyaki chicken in a mold or directly on plates. Garnish with sesame seeds and fresh cilantro.
