Ingredients
- 1 head cauliflower (rinsed, core and bottom leaves removed)
- 2 tablespoons water
- 1/2 cup mayonnaise
- 1 teaspoon finely chopped onion
- 1 teaspoon mustard
- 3 slices American cheese (or 1/2 cup grated cheddar cheese)
Instructions
- Place the whole cauliflower in a microwave-safe casserole dish. Add 2 tablespoons of water and cover with a lid or plastic wrap.
- Microwave on high for 8 to 9 minutes until tender-crisp. Check doneness with a fork; return to the microwave for an additional 1-2 minutes if needed.
- In a small mixing bowl, combine mayonnaise, finely chopped onion, and mustard. Mix well until smooth.
- Spoon the mustard sauce over the cooked cauliflower, spreading evenly with the back of a spoon.
- Lay cheese slices on top of the cauliflower in alternating directions for even melting.
