  • 1 head cauliflower (rinsed, core and bottom leaves removed)
  • 2 tablespoons water
  • 1/2 cup mayonnaise
  • 1 teaspoon finely chopped onion
  • 1 teaspoon mustard
  • 3 slices American cheese (or 1/2 cup grated cheddar cheese)

Instructions

  1. Place the whole cauliflower in a microwave-safe casserole dish. Add 2 tablespoons of water and cover with a lid or plastic wrap.
  2. Microwave on high for 8 to 9 minutes until tender-crisp. Check doneness with a fork; return to the microwave for an additional 1-2 minutes if needed.
  3. In a small mixing bowl, combine mayonnaise, finely chopped onion, and mustard. Mix well until smooth.
  4. Spoon the mustard sauce over the cooked cauliflower, spreading evenly with the back of a spoon.
  5. Lay cheese slices on top of the cauliflower in alternating directions for even melting.
  6. Cover again and microwave for an additional 1-2 minutes until heated through and cheese is melted. Allow to stand for two minutes before serving.
