  • 2 chipotle chiles in adobo sauce (seeds and veins removed)
  • 1/2 cup fresh orange juice
  • 1 tablespoon fresh lime juice
  • 1/4 cup cider vinegar
  • 1 teaspoon anise seeds
  • 1/2 teaspoon dried oregano (preferably Mexican Oregano)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground clove
  • 1/8 cup brown sugar
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 pounds boneless beef shoulder (Boston butt), sliced ¾ inch thick
  • 6 rings fresh pineapple (cut into chunks)
  • 2 sweet onions (sliced)
  • 16 corn tortillas
  • Cilantro and avocado (chopped for serving)

Instructions

  1. Prepare the Marinade: Soak dried chiles until softened. Blend them with chipotles, orange juice, vinegar, spices, and olive oil until smooth.
  2. Cook the Marinade: Heat blended marinade in a saucepan until thickened. Let it cool.
  3. Marinate the Beef: Slice beef shoulder and coat in the cooled marinade; refrigerate for at least 3 hours.
  4. Grill the Beef: Preheat grill to high heat then lower to medium; grill marinated beef for 12 minutes per side. Add pineapple and onion to caramelize.
  5. Assemble Tacos: Slice grilled beef thinly; warm tortillas and fill with beef, grilled pineapple, onions, and desired toppings.
