  • 1 (10 oz) can Rotel diced tomatoes
  • 2 cups chicken broth
  • 8 oz pasta shells
  • 2 cups shredded cheddar cheese (plus more for serving)
  • Sour cream
  • Green onions
  • Cilantro
  • Avocado

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for about 3 minutes until softened. Then, add minced garlic and sauté for an additional minute until fragrant.
  2. Add ground beef (or turkey) to the skillet, breaking it apart as it cooks for about 10 minutes until browned. Drain excess grease if necessary.
  3. Stir in taco seasoning, Rotel diced tomatoes, and chicken broth until well combined.
  4. Incorporate pasta shells into the mixture, ensuring they’re evenly distributed.
  5. Bring to a boil on high heat, then reduce to medium-low and cover loosely. Simmer for about 12-15 minutes or until pasta is cooked through, stirring frequently to prevent sticking. Add more chicken broth if needed.
  6. Once cooked, remove from heat and stir in shredded cheese until melted. Serve hot with your choice of toppings.
