  • 3/4 cup light coconut milk
  • 1/2 cup sweet chili sauce
  • 1 lime
  • 4 chicken breasts (~2 lbs)
  • 8 cups cauliflower rice
  • 11/2 Tablespoons coconut oil
  • 1/4 cup fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large Ziplock bag, mix 1/2 cup coconut milk, sweet chili sauce, and juice from half a lime. Season with salt and pepper. Add chicken breasts, seal the bag, and refrigerate for 30 minutes.
  2. Preheat grill to medium-high heat. Grill chicken for 4-5 minutes per side until fully cooked (internal temperature should reach 165°F). Let rest for 5 minutes before slicing.
  3. Heat coconut oil in a skillet over medium heat. Add cauliflower rice, season with salt and pepper, and sauté for 5-7 minutes until tender. Stir in remaining lime juice and chopped cilantro.
  4. Plate cauliflower rice topped with grilled chicken and offer extra sweet chili sauce on the side.
