  • 3-ounce package strawberry flavored vegan gelatin powder

  • 2 1/4 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter, softened (for frosting)
  • 1/4 cup heavy cream (or whole milk, for frosting)
  • 2 teaspoons pure vanilla extract (for frosting)
  • 1/8 teaspoon fine sea salt (for frosting)
  • 4 cups confectioners' sugar, sifted (for frosting)
  • 12 Golden sandwich cookies, cream filling removed (or 1 ½ cups crushed shortbread cookies for topping)
  • 1 cup freeze-dried strawberries, lightly crushed (for topping)
  • 4 tablespoons unsalted butter, melted and cooled (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg whites and whole egg one at a time, mixing well after each addition.
  3. Pour in the whole milk and stir until combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, vegan gelatin powder, and salt. Gradually add this mixture to the wet ingredients while mixing until just combined.
  5. Pour the batter into the prepared baking pan. Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the center comes out clean. Allow cooling completely on a wire rack.
  6. In a large bowl, beat together softened butter, heavy cream (or milk), vanilla extract, salt, and confectioners' sugar until smooth and creamy.
  7. Slice the cooled cake horizontally into two equal layers. Spread half of the frosting on top of one layer before placing the second layer on top. Cover the top with remaining frosting.
  8. In a separate bowl, mix crushed cookies with freeze-dried strawberries. Drizzle melted butter over the mixture until evenly coated. Press this mixture onto the frosted top layer of your cake gently.
