Ingredients

Scale
  • 1 pound flank steak (or skirt steak or sirloin), thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 large flour tortillas (12 inches)
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • Shredded cheese
  • Pico de gallo
  • Avocado or guacamole
  • Sour cream or Greek yogurt

Instructions

  1. 1. Marinate the Steak: In a mixing bowl, combine olive oil, garlic, lime juice, cumin, chili powder, salt, and pepper. Add the sliced steak and toss to coat well. Let marinate in the fridge for at least 30 minutes.
  2. 2. Cook the Steak: Heat a skillet over medium-high heat. Sear the marinated steak for 2–3 minutes per side until cooked to your liking. Let rest before slicing thinly.
  3. 3. Prepare Tortillas: Warm each tortilla in a dry skillet or microwave until pliable.
  4. 4. Assemble Burritos: Layer rice, black beans, sliced steak, cheese, pico de gallo, avocado or guacamole on each tortilla.
  5. 5. Roll Up: Fold sides in and roll tightly to enclose fillings. Optionally crisp seam-side down in a hot skillet for a minute.
