  • 5 ounces frozen chopped spinach (thawed and squeezed dry)
  • ½ cup crumbled feta cheese
  • ¼ cup ricotta cheese
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons scallions (chopped)
  • 2 garlic cloves (minced)
  • ½ teaspoon dried dill

Instructions

  1. Preheat your oven to 400°F.
  2. Pat chicken dry and create pockets by cutting horizontally through the thickest part.
  3. Season both sides of the chicken with paprika, oregano, garlic powder, onion powder, salt, and black pepper.
  4. In a bowl, mix thawed spinach, feta, ricotta, scallions, minced garlic, and dill until well combined.
  5. Stuff each chicken breast pocket with the filling and secure with toothpicks.
  6. Heat olive oil in an oven-safe skillet over medium-high heat and sear stuffed chicken on both sides until golden (3-4 minutes).
