  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips (for topping)
  • 1 tablespoon coconut oil or butter

Instructions

  1. Melt unsalted butter over medium-low heat in a medium saucepan.
  2. Stir in mini vegan marshmallows until smooth. Remove from heat.
  3. Fold in crispy rice cereal and crushed graham crackers until evenly coated.
  4. Transfer mixture onto greased parchment paper, pressing down into a rectangle about ½-inch thick.
  5. Spread chocolate spread over the pressed layer and sprinkle remaining mini marshmallows on top.
  6. Using parchment paper as a guide, roll tightly from one long edge to form a log shape.
  7. Wrap the log in parchment paper and refrigerate for 30–45 minutes until firm.
  8. Melt semi-sweet chocolate chips with coconut oil; drizzle over the roll and slice into rounds.
