  • pounds cherry tomatoes (halved)
  • 2 tablespoons extra-virgin olive oil
  • Fine sea salt
  • Freshly ground black pepper
  • 2 tablespoons unsalted butter
  • 1 shallot (chopped)
  • 23 fresh thyme sprigs
  • 1 cup heavy cream
  • 1 tablespoon fresh basil (coarsely chopped)
  • 1 pound unique-shaped pasta
  • 1 cup freshly grated Parmigiano-Reggiano cheese (divided)

Instructions

  1. Preheat oven to 275°F.
  2. On a baking sheet, arrange halved cherry tomatoes cut-side up. Drizzle with olive oil, salt, and pepper. Roast for about 90 minutes until puckered and juicy.
  3. In a large pot, bring salted water to boil for pasta.
  4. In a deep sauté pan over medium-low heat, melt butter and sauté chopped shallot until softened.
  5. Add roasted tomatoes and their juices, thyme sprigs, and heavy cream to the pan; simmer gently.
  6. Cook pasta according to package instructions until al dente; reserve some pasta water.
  7. Drain pasta and combine with sauce, adding reserved water if needed for consistency.
