  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 cup shredded sharp white cheddar cheese
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil

  • to taste Black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp Cajun seasoning
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1 tbsp lemon juice
  • pinch cayenne or red pepper flakes (optional)
  • to taste chopped parsley or green onions (optional garnish)

Instructions

  1. Bring chicken broth to a boil in a large pot. Gradually whisk in the stone-ground grits. Reduce heat to low, cover, and cook for 20-25 minutes until creamy.
  2. Stir in heavy cream, butter, and cheddar cheese into the cooked grits. Season with salt and pepper; keep warm.
  3. In a skillet over medium-high heat, add olive oil. Season shrimp with smoked paprika and Cajun seasoning. Cook shrimp for about 2-3 minutes per side until pink; remove from skillet.
  4. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and heavy cream; stir in lemon juice and cayenne if desired.
  5. Return shrimp to the skillet and coat them in the garlic sauce before serving over the creamy grits.
