Ingredients

2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground cinnamon (optional)
2 tablespoons honey
1/3 cup crumbled feta cheese
1 tablespoon chopped fresh parsley


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into evenly sized 1/2-inch thick rounds.
  3. Arrange the slices in a single layer on the prepared baking sheet.
  4. Drizzle the olive oil over the sweet potatoes and season with salt, black pepper, and cinnamon if using. Toss lightly to coat.
  5. Roast for 20–25 minutes, flipping halfway through, until the rounds are golden brown and tender.
  6. Remove from the oven and transfer to a serving platter.
  7. Drizzle the warm honey evenly over the roasted sweet potatoes.
  8. Sprinkle with crumbled feta cheese and chopped parsley.
  9. Serve immediately while warm.
