Ingredients
- 2 packages yeast (4 1/2 teaspoons)
- 6 tablespoons shortening or unsalted butter
- 1 cup granulated sugar
- 9 cups unbleached all-purpose flour
- 2 cups hot water
- 2 eggs, beaten
- 1 tablespoon salt
- 1/2 cup softened butter
- 1/2 cup light brown sugar
- 3 1/2 cups raspberries
- 1/3 cup granulated sugar (for filling)
- Zest of 1 large lemon
- 1 1/2 teaspoons cornstarch
- 4 ounces cream cheese, at room temperature
- 1/4 cup unsalted butter (for frosting)
- 1 cup powdered sugar
- Additional lemon zest for frosting
Instructions
- Prepare the yeast by dissolving it in lukewarm water and letting it sit for five minutes.
- In a stand mixer bowl, combine shortening, sugar, and salt with hot water; let cool slightly. Stir in two cups of flour until smooth, then add the yeast mixture and beaten eggs.
- Gradually mix in remaining flour until dough is smooth. Knead by hand if sticky until satiny.
- Place dough in a greased bowl, cover with a towel, and let rise until doubled (about 30 minutes).
- Roll out half the dough into a rectangle, spread with softened butter, sprinkle with brown sugar, and top with the raspberry mixture.
- Roll up tightly and cut into pieces; place in a greased baking pan.
- Repeat with remaining dough and let rolls rise until doubled (about an hour). Bake at 350°F for 25–32 minutes or until golden brown.
- For frosting, beat together cream cheese, butter, powdered sugar, and lemon zest until smooth.
