  • 2 packages yeast (4 1/2 teaspoons)
  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 eggs, beaten
  • 1 tablespoon salt
  • 1/2 cup softened butter
  • 1/2 cup light brown sugar
  • 3 1/2 cups raspberries
  • 1/3 cup granulated sugar (for filling)
  • Zest of 1 large lemon
  • 1 1/2 teaspoons cornstarch
  • 4 ounces cream cheese, at room temperature
  • 1/4 cup unsalted butter (for frosting)
  • 1 cup powdered sugar
  • Additional lemon zest for frosting

Instructions

  1. Prepare the yeast by dissolving it in lukewarm water and letting it sit for five minutes.
  2. In a stand mixer bowl, combine shortening, sugar, and salt with hot water; let cool slightly. Stir in two cups of flour until smooth, then add the yeast mixture and beaten eggs.
  3. Gradually mix in remaining flour until dough is smooth. Knead by hand if sticky until satiny.
  4. Place dough in a greased bowl, cover with a towel, and let rise until doubled (about 30 minutes).
  5. Roll out half the dough into a rectangle, spread with softened butter, sprinkle with brown sugar, and top with the raspberry mixture.
  6. Roll up tightly and cut into pieces; place in a greased baking pan.
  7. Repeat with remaining dough and let rolls rise until doubled (about an hour). Bake at 350°F for 25–32 minutes or until golden brown.
  8. For frosting, beat together cream cheese, butter, powdered sugar, and lemon zest until smooth.
