- 240 g All-purpose flour
- 100 g Powdered sugar
- 40 g Shredded almonds
- 120 g Cold butter (cubed)
- 1 Large egg
- 300 g Fresh raspberries
- 180 g Mango (cut into small cubes)
- 180 g Sugar
- 2 tbsp Lemon juice
- 3 Egg yolks
- 3 tbsp Cornstarch
- 1/8 tsp Salt
- 1/8 tsp Salt
- 2 tsp Vanilla extract
Instructions
- For the crust, mix flour, powdered sugar, shredded almonds, and salt in a bowl. Cut in cold butter until crumbly, then add egg and vanilla extract to combine. Chill for at least 30 minutes.
- Preheat the oven to 180°C (350°F). Roll out chilled dough and press into a tart pan. Blind bake for about 20 minutes.
- Prepare the filling by cooking raspberries, mangoes, sugar, lemon juice, egg yolks, cornstarch, salt, and butter in a saucepan until thickened.
- Pour filling into cooled crust and bake for another 20–25 minutes. Let cool before garnishing with fresh fruit.
