Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup sliced almonds, (chopped)
  • 2 tablespoons chia seeds
  • 1/8 teaspoon cinnamon
  • a pinch of salt
  • 1/4 cup + 2 tablespoons creamy peanut butter, (melted and slightly cooled)
  • 1/4 cup + 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • 1/4 cup ground peanuts or ground almonds, (to roll the balls in)

Instructions

  1. In a mixing bowl, combine rolled oats, flaxseed, chopped almonds, chia seeds, salt, and cinnamon. Mix well.
  2. Melt the peanut butter in the microwave for 30 seconds. Allow it to cool slightly before stirring in honey and vanilla extract.
  3. Pour the wet mixture over the dry ingredients and mix thoroughly until combined. Fold in mini chocolate chips.
  4. Roll small portions into golf-ball-sized balls and coat them in ground peanuts or almonds.
  5. Refrigerate for at least 30 minutes before enjoying.
