- 1 cup old-fashioned rolled oats
- 1/4 cup ground flaxseed
- 1/4 cup sliced almonds, (chopped)
- 2 tablespoons chia seeds
- 1/8 teaspoon cinnamon
- a pinch of salt
- 1/4 cup + 2 tablespoons creamy peanut butter, (melted and slightly cooled)
- 1/4 cup + 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
- 1/4 cup ground peanuts or ground almonds, (to roll the balls in)
Instructions
- In a mixing bowl, combine rolled oats, flaxseed, chopped almonds, chia seeds, salt, and cinnamon. Mix well.
- Melt the peanut butter in the microwave for 30 seconds. Allow it to cool slightly before stirring in honey and vanilla extract.
- Pour the wet mixture over the dry ingredients and mix thoroughly until combined. Fold in mini chocolate chips.
- Roll small portions into golf-ball-sized balls and coat them in ground peanuts or almonds.
- Refrigerate for at least 30 minutes before enjoying.
