  • 3 lb boneless beef shoulder
  • 1/2 cup soy sauce
  • 1 1/2 cups chicken broth
  • 1 cup pineapple juice
  • 3/4 cup ketchup
  • 1/4 cup coconut sugar
  • 2 tbsp minced garlic
  • 2 tsp ground ginger
  • 1 cup pineapple, chopped
  • 1 tbsp arrowroot
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine soy sauce, chicken broth, pineapple juice, ketchup, coconut sugar, minced garlic, and ground ginger. Mix well.
  2. Trim excess fat from the beef and cut into large chunks. Season with salt and pepper.
  3. Spray your slow cooker with cooking spray and place the seasoned beef inside.
  4. Pour the prepared sauce over the beef in the slow cooker. Cover and cook on low for 8 hours.
  5. Once cooked (internal temperature of 145°F), transfer meat to a bowl and shred using two forks.
