Ingredients
- 3 lb boneless beef shoulder
- 1/2 cup soy sauce
- 1 1/2 cups chicken broth
- 1 cup pineapple juice
- 3/4 cup ketchup
- 1/4 cup coconut sugar
- 2 tbsp minced garlic
- 2 tsp ground ginger
- 1 cup pineapple, chopped
- 1 tbsp arrowroot
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine soy sauce, chicken broth, pineapple juice, ketchup, coconut sugar, minced garlic, and ground ginger. Mix well.
- Trim excess fat from the beef and cut into large chunks. Season with salt and pepper.
- Spray your slow cooker with cooking spray and place the seasoned beef inside.
- Pour the prepared sauce over the beef in the slow cooker. Cover and cook on low for 8 hours.
- Once cooked (internal temperature of 145°F), transfer meat to a bowl and shred using two forks.
