- 1/2 red bell pepper (cut into bite-size pieces)
- 1/2 onion (sliced or cut into bite-size pieces)
- 3/4 cup pineapple juice (from the canned pineapple)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic (minced)
- 3 tablespoons olive oil (divided)
- 1/2 teaspoon garlic powder
- Pepper (to taste)
Instructions
- In a bowl, mix the sauce ingredients: pineapple juice, honey, soy sauce, rice vinegar, ginger, garlic, and cornstarch. Whisk until smooth.
- Chop the red bell pepper and slice the onion into bite-sized pieces.
- Cut chicken into 1-inch pieces and season with garlic powder and pepper. Toss with cornstarch until coated.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook chicken in batches until browned and cooked through (about 7-8 minutes per batch). Transfer to a plate.
- If needed, add more oil to the skillet; sauté pineapple for about one minute before adding bell pepper and onion. Cook until veggies are tender-crisp (about 3 minutes).
- Return chicken to the skillet and pour in the prepared sauce; cook until thickened (1-2 minutes). Serve over rice or noodles.
