Ingredients
- ½ cup butter (room temperature)
- 2 cups all-purpose flour
- 1 tbsp cocoa powder
- 1 large egg
- ½ cup buttermilk
- 1 cup light brown sugar
- ½ tsp vanilla extract
- ½ tsp baking powder
- ½ tsp salt
- 1 cup powdered sugar
- 1 cup vegan marshmallow fluff
- Gel food colors (blue & red)
Instructions
- Preheat the oven to 350°F (180°C).
- In a mixing bowl, beat together butter and light brown sugar until fluffy. Add egg, vanilla extract, and buttermilk; mix well.
- Sift flour, cocoa powder, baking powder, and salt together; fold into wet ingredients until just combined.
- Divide the batter into two bowls; color one red and the other blue using gel food coloring. Chill for 10 minutes.
- Scoop portions of each colored batter onto a baking tray lined with parchment paper and flatten slightly. Bake for 8-10 minutes; cool completely on wire racks.
- In another bowl, whisk together softened butter, vegan marshmallow fluff, powdered sugar, and vanilla extract until smooth.
- Assemble whoopie pies by piping filling between one red cookie and one blue cookie.
