  • 4 tablespoons olive oil
  • 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons fajita seasoning
  • 1 yellow onion, diced
  • 1 yellow bell pepper, sliced into 1-inch long strips
  • 1 green bell pepper, sliced into 1-inch long strips
  • 1 red bell pepper, sliced into 1-inch long strips
  • 4 cloves garlic, minced
  • 2 cups chicken stock (reduced-sodium)
  • 1/2 cup heavy cream
  • 10 oz can diced tomatoes
  • 8 oz dried bow tie pasta
  • Kosher salt and black pepper (to taste)
  • Lime wedges
  • Sour cream
  • Sliced green onions
  • Chopped cilantro

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces seasoned with half the fajita seasoning. Cook until golden brown on both sides, then remove from the pan.
  3. In the same skillet, add remaining olive oil, onion, bell peppers, and seasoning. Sauté until softened.
  4. Stir in minced garlic for 30 seconds before removing vegetables from the pan.
  5. Pour in chicken stock, heavy cream, diced tomatoes, and pasta; season with salt and pepper.
  6. Bring to a boil, reduce heat, cover, and simmer for 10–15 minutes until pasta is al dente.
  7. Return chicken and vegetables to the pot; stir well to combine.
  8. Serve warm with lime wedges and optional garnishes like sour cream or cilantro.
