Ingredients
- 1 pound elbow macaroni
- 1 cup chopped celery
- 1 grated carrot
- 1/2 cup diced sweet onion
- 4 hard-boiled eggs (yolks separated from whites)
- 4 tablespoons yellow mustard
- 3/4 cup sugar
- 1 cup Miracle Whip or mayonnaise
- 1/2 cup evaporated milk
- 1/3 cup vinegar (white or cider)
- 1 teaspoon kosher salt

Instructions
- Cook the elbow macaroni according to package directions until tender. Reserve 1/4 cup of hot pasta water before draining. Allow the pasta to cool.
- While the macaroni cooks, separate the yolks from the whites of the hard-boiled eggs. Dice the egg whites and set aside.
- In a medium bowl, mash the egg yolks with yellow mustard, then mix in sugar, Miracle Whip (or mayonnaise), evaporated milk, vinegar, and salt until smooth.
- In a large bowl, combine cooled macaroni with chopped celery, grated carrot, diced onion, and reserved egg whites. Stir in a few tablespoons of reserved hot pasta water.
- Pour the dressing over the macaroni mixture and stir until well combined. Cover and refrigerate for at least two hours or overnight before serving.
