  • 1 cup uncooked long-grain rice (such as basmati or jasmine)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the rice according to package directions. While it cooks, mix 2 tablespoons olive oil, lemon juice, and oregano in a bowl. Add chicken breasts to the marinade and let sit for at least 15 minutes.
  2. Heat remaining olive oil in a skillet over medium-high heat. Cook marinated chicken for 5–7 minutes on each side until fully cooked through (internal temperature should reach 165°F).
  3. Remove chicken from the pan and let rest for about 5 minutes before slicing into bite-sized strips.
  4. Combine cherry tomatoes and parsley in a small bowl. Whisk any remaining marinade with fresh olive oil for dressing.
  5. To serve, divide rice among bowls, top with sliced chicken, spoon over tomato mixture, and drizzle with dressing.
