Instructions
- Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
- In one bowl, whisk together flour, baking powder, and salt; set aside.
- In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla extract, milk, and mango purée.
- Gradually mix in the dry ingredients until just combined.
- Fill cupcake liners about ¾ full and bake for 18–20 minutes. Allow to cool completely.
- Once cooled, fill each cupcake center with strawberry jam.
- For frosting, beat softened butter until creamy; gradually add powdered sugar and mix in heavy cream until fluffy.
- Divide frosting into three bowls; color one with mango purée and another with strawberry purée.
