  • 3 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp mango purée (for frosting)
  • 2 tbsp strawberry purée (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla extract, milk, and mango purée.
  4. Gradually mix in the dry ingredients until just combined.
  5. Fill cupcake liners about ¾ full and bake for 18–20 minutes. Allow to cool completely.
  6. Once cooled, fill each cupcake center with strawberry jam.
  7. For frosting, beat softened butter until creamy; gradually add powdered sugar and mix in heavy cream until fluffy.
  8. Divide frosting into three bowls; color one with mango purée and another with strawberry purée.
  9. Pipe colorful frosting onto cupcakes in a swirl pattern.
