- 1 lb rotini pasta
- 16 oz Italian salad dressing
- 8 oz mozzarella cheese, cubed
- 1 cup diced chicken breast
- 1/2 cup mini turkey pepperoni
- 1/2 cup sliced olives
- 1 cup halved grape tomatoes
- 1/4 cup chopped flat-leaf parsley
- Salt & pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water according to package directions until al dente. Drain and set aside to cool.
- In a large mixing bowl, combine the cooked rotini, mozzarella cheese, diced chicken breast, mini turkey pepperoni, sliced olives, halved grape tomatoes, chopped parsley, and half of the Italian dressing. Mix well.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least one hour.
- Just before serving, stir in the remaining Italian dressing and adjust seasoning with salt and pepper as needed.
