  • 8 oz (225g) spaghetti or fettuccine
  • 1 cup (250g) fresh ricotta cheese
  • Zest and juice of 2 medium lemons
  • 2 tbsp (30ml) extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant, about 1 minute.
  3. In a mixing bowl, combine ricotta, lemon zest, and juice; mix until smooth.
  4. Add drained pasta to the skillet with garlic, then pour in the ricotta mixture along with reserved pasta water (start with 1/2 cup). Toss until well combined.
  5. Adjust sauce consistency with additional reserved water if needed.
  6. Serve topped with grated Parmesan cheese and garnish with lemon zest or fresh herbs.
