Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In one bowl, whisk together cake flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy.
  3. Add eggs one at a time along with vanilla extract, lemon juice, milk, and lemon zest; mix until combined.
  4. Gradually fold in dry ingredients until just combined.
  5. Spoon batter into liners about two-thirds full and bake for 20 minutes or until a toothpick comes out clean.
