- 1/2 cup shredded coconut, toasted
- 2 teaspoons lime zest
Instructions
- Preheat your oven to 350°F (175°C). Grease a donut pan.
- In a mixing bowl, whisk together flour, baking powder, salt, sugar, and lime zest.
- In another bowl, mix melted coconut oil, egg, and coconut milk until smooth.
- Combine wet and dry ingredients gently until just mixed.
- Fill the donut pan three-quarters full with the batter.
- Bake for about 10 minutes until lightly golden; cool for 5 minutes before transferring to a rack.
- Prepare the glaze by mixing confectioners' sugar with lime juice, zest, and salt until smooth.
- Glaze cooled donuts and sprinkle with toasted coconut.
