  • 1/2 cup granulated sugar

  • 2 1/2 tablespoons coconut oil, melted
  • 1 large egg, at room temperature
  • 1/2 cup coconut milk
  • 1 cup confectioners' sugar
  • 1 and 1/2 tablespoons key lime juice
  • 1 teaspoon lime zest
  • 1/8 teaspoon salt
  • 1/2 cup shredded coconut, toasted
  • 2 teaspoons lime zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan.
  2. In a mixing bowl, whisk together flour, baking powder, salt, sugar, and lime zest.
  3. In another bowl, mix melted coconut oil, egg, and coconut milk until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fill the donut pan three-quarters full with the batter.
  6. Bake for about 10 minutes until lightly golden; cool for 5 minutes before transferring to a rack.
  7. Prepare the glaze by mixing confectioners' sugar with lime juice, zest, and salt until smooth.
  8. Glaze cooled donuts and sprinkle with toasted coconut.
