Ingredients
- 1 1/4 cup sliced strawberries
- 1 1/4 cup coconut cream
- 1/3 cup freshly squeezed lemon juice (about 1 1/2 lemons)
- 1/3 cup powdered Swerve Sweetener
Instructions
- Blend all ingredients in a blender until smooth. Adjust sweetness if needed.
- Pour the mixture into popsicle molds, filling each about 3 ounces.
- Insert wooden sticks into each mold approximately 2/3 of the way down. If too thin to hold sticks, freeze for about an hour first.
- Freeze for at least 6 to 8 hours until solid.
- To unmold, run warm water over the outside of the molds for about 5 to 10 seconds and gently tug on the sticks.
