Ingredients

  • 1 1/4 cup sliced strawberries
  • 1 1/4 cup coconut cream
  • 1/3 cup freshly squeezed lemon juice (about 1 1/2 lemons)
  • 1/3 cup powdered Swerve Sweetener

Instructions

  1. Blend all ingredients in a blender until smooth. Adjust sweetness if needed.
  2. Pour the mixture into popsicle molds, filling each about 3 ounces.
  3. Insert wooden sticks into each mold approximately 2/3 of the way down. If too thin to hold sticks, freeze for about an hour first.
  4. Freeze for at least 6 to 8 hours until solid.
  5. To unmold, run warm water over the outside of the molds for about 5 to 10 seconds and gently tug on the sticks.
