  • 3 tablespoons coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 4 tablespoons butter, cubed & chilled
  • 1 teaspoon vanilla extract
  • 2/3 cup powdered sugar-free sweetener
  • 3/4 cup no sugar creamy peanut butter
  • 6 oz cream cheese, softened
  • 3/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar-free sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9-inch pie pan.
  2. In a food processor, combine almond flour, coconut flour, cocoa powder, baking powder, xanthan gum, and salt. Add chilled butter and vanilla; pulse until crumbly.
  3. Press the mixture into the prepared pie pan and bake for 9-10 minutes. Cool completely.
  4. For the filling, beat together powdered sweetener, peanut butter, and cream cheese until fluffy.
  5. Whip heavy cream until stiff peaks form, then fold half into the peanut butter mixture before gently folding in the rest.
  6. Spread filling over cooled crust and refrigerate for at least 2 hours.
  7. Prepare whipped topping by beating additional heavy cream with sweetener until thickened; spread on top of the pie before serving.
