Ingredients

  • 1 pint heavy whipping cream
  • 1/2 cup confectioners Swerve or preferred sweetener
  • 1 1/2 teaspoons vanilla extract
  • 7 oz keto chocolate chips (white, milk, or dark)
  • 1 1/2 tablespoons coconut oil
  • pinch of salt

Instructions

  1. In a mixing bowl, whisk together heavy whipping cream, sweetener, vanilla extract, and a pinch of salt until combined.
  2. Pour the mixture into popsicle molds and insert sticks. Freeze for about 3 hours or overnight until solid.
  3. In a microwave-safe bowl, melt the keto chocolate chips in increments, stirring until smooth. Mix in coconut oil.
  4. Once frozen, remove ice cream bars from molds and dip into melted chocolate until coated.
  5. If desired, add chopped nuts before placing on parchment paper to set.
