  • 2/3 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup Greek yogurt
  • 3/4 cup fresh blueberries (plus extra for topping)
  • 6 oz cream cheese, softened
  • 3 tbsp granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, combine the flours, brown sugar, baking powder, and salt. In another bowl, whisk together the granulated sugar, vegetable oil, egg, vanilla extract, and Greek yogurt until smooth.
  3. Gradually mix the wet ingredients into the dry ingredients until just combined. Gently fold in blueberries tossed in flour.
  4. For the cream cheese filling, beat together softened cream cheese with granulated sugar until smooth. Gradually add powdered sugar and milk to reach desired consistency.
  5. Fill muffin tins halfway with batter, add a dollop of cream cheese filling on top, then sprinkle remaining blueberries over each muffin.
  6. Bake for approximately 22 minutes or until golden and a toothpick comes out clean.
