  • ½ cup canned pineapple juice (room temperature)
  • ½ cup whole milk (warmed)
  • 5 tablespoons unsalted butter (melted)
  • 6 tablespoons granulated sugar
  • 2 eggs (room temperature)
  • 2¼ teaspoons instant yeast
  • 4 cups bread flour
  • 1½ teaspoons fine sea salt
  • ¼ cup all-purpose flour
  • 1 egg (lightly beaten)
  • 2 tablespoons water
  • 1 tablespoon salted butter (melted)

Instructions

  1. In a stand mixer bowl, mix pineapple juice, warm milk, melted butter, sugars, eggs, and instant yeast. Add all-purpose flour and 2 cups of bread flour; stir until a rough dough forms.
  2. Attach the dough hook and knead for about 4-5 minutes while gradually adding the remaining bread flour until the dough is soft and smooth.
  3. Place the dough in a greased bowl, cover with plastic wrap, and let it rise until doubled in size (about 1½ hours).
  4. After rising, deflate the dough and divide it into 15 equal pieces; shape each piece into a ball.
  5. Arrange the balls in a greased baking pan and cover again to rise until doubled (about another hour).
  6. Preheat oven to 375°F and bake rolls for approximately 20 minutes until golden brown. Brush with melted butter before serving.
