- 2 cups wild blueberries (fresh or frozen)
- 3/4 cup granulated sugar
- 5 tablespoons cornstarch
- Fresh lemon zest and juice
- Ground cinnamon and nutmeg
- Unsalted butter (diced)
- 1 large egg yolk
- 1 tablespoon heavy cream or whole milk
- Turbinado or coarse sugar (for sprinkling)
Instructions
- Roll out chilled pie dough on a floured surface to about 1/8 inch thick and fit one round into your pie dish.
- In a mixing bowl, combine blueberries, sugar, cornstarch, lemon zest, lemon juice, cinnamon, nutmeg, and salt. Mix gently to coat the blueberries.
