- 1½ teaspoons ground cumin
- 1 teaspoon ground coriander
- Pinch of cayenne powder
- ⅛ teaspoon dried thyme
- ½ teaspoon table salt
- ¼ teaspoon black pepper
- 1 tablespoon soy sauce or tamari
- ½ cup dry white apple vinegar
- 2½ tablespoons Vegetable Better Than Bouillon Broth Base
- 7½ cups hot water
- 1 tablespoon balsamic vinegar
- ¼ cup fresh cilantro, roughly chopped
- ½ –1 tablespoon lime juice
- Crusty sourdough bread
Instructions
- Rinse lentils under cool water and remove debris.
- In a heavy-bottomed pot, sauté onion in olive oil until translucent. Add garlic, carrots, and celery; cook until softened.
- Stir in the spices and soy sauce; cook until fragrant.
- Deglaze with apple vinegar, then add lentils, broth base, and hot water. Bring to a simmer.
- Cover and cook for 20-25 minutes until lentils are tender.
- Stir in balsamic vinegar, cilantro, and lime juice before serving.
