  • 1 onion, chopped
  • 1 stalk celery, diced
  • 12 carrots, peeled chopped
  • 4 garlic cloves, minced
  • 3 fresh thyme sprigs
  • 1 (15 oz.) can organic white beans, drained and rinsed
  • 2 cups cubed sweet potatoes
  • 2 cups cubed russet or yukon potatoes
  • 4 Tbsps organic tomato paste
  • 3 Tbsps organic all-purpose flour
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 (28 oz.) can tomato sauce or diced tomatoes
  • 3 cups organic vegetable stock

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, celery, carrots, and minced garlic; sauté until softened.
  2. Stir in fresh thyme, smoked paprika, and sea salt; cook for another minute.
  3. Add rinsed white beans, cubed sweet potatoes, and russet potatoes; mix well.
  4. Stir in organic tomato paste and all-purpose flour until combined. Then add canned tomatoes and vegetable stock.
  5. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 30 minutes until potatoes are tender.
  6. Taste and adjust seasonings if needed before serving.
