Ingredients
- 1 1/2 pounds chicken (breast, thighs, or tenderloins)
- ½ cup soy sauce
- ½ cup fruit juice (for mirin substitute)
- ¼ cup granulated sugar
- 1 tablespoon rice vinegar
- 3 cloves garlic (minced)
- 1 tablespoon fresh ginger (minced)
- 1 teaspoon sesame oil
Instructions
- In a saucepan, combine soy sauce, fruit juice, sugar, rice vinegar, garlic, ginger, and sesame oil. Bring to a boil, then lower heat and simmer for 10-15 minutes until slightly thickened. Let cool.
- Reserve ¼ cup of the teriyaki sauce. Pour the remaining sauce over chicken in a mixing bowl; coat well and marinate in the fridge for at least 2 hours.
- Preheat grill to high heat. Remove chicken from marinade and grill for about 5 minutes on each side or until fully cooked (165º F). Brush with reserved marinade during grilling.
- Serve hot with extra teriyaki sauce drizzled on top.
