- 2 freestone peaches (sliced)
- 1 baguette (sliced)
- Olive oil (for brushing)
- Fresh basil leaves
- 1 cup water
- 1.5 cups fresh blackberries
- 0.5 cup balsamic vinegar
- 2 – 4 oz. burrata balls (or fresh mozzarella slices)
Instructions
- Preheat the grill and lightly brush it with olive oil.
- Brush peach slices with olive oil and grill each side for 1.5-2 minutes until marked.
- Brush baguette slices with olive oil and grill until toasted, about 2 minutes per side.
- In a small saucepan, combine water and blackberries; mash while boiling for 7-10 minutes.
- Strain the mixture using a fine mesh strainer to separate the juice from solids.
- Return juice to heat, add balsamic vinegar, boil for 5 minutes, then simmer until thickened.
- Assemble salad by arranging peaches and basil on a plate, topping with burrata and drizzling with sauce.
