  • 2 freestone peaches (sliced)
  • 1 baguette (sliced)
  • Olive oil (for brushing)
  • Fresh basil leaves
  • 1 cup water
  • 1.5 cups fresh blackberries
  • 0.5 cup balsamic vinegar
  • 24 oz. burrata balls (or fresh mozzarella slices)

Instructions

  1. Preheat the grill and lightly brush it with olive oil.
  2. Brush peach slices with olive oil and grill each side for 1.5-2 minutes until marked.
  3. Brush baguette slices with olive oil and grill until toasted, about 2 minutes per side.
  4. In a small saucepan, combine water and blackberries; mash while boiling for 7-10 minutes.
  5. Strain the mixture using a fine mesh strainer to separate the juice from solids.
  6. Return juice to heat, add balsamic vinegar, boil for 5 minutes, then simmer until thickened.
  7. Assemble salad by arranging peaches and basil on a plate, topping with burrata and drizzling with sauce.
