  • 1/2 pound Mexican chicken sausage
  • 1 pound ground chicken
  • 1/2 cup seasoned rice apple vinegar
  • 2 limes (zest and juice)
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked salt
  • 1/4 onion (grated)
  • 2 cloves garlic (grated)
  • 1/4 teaspoon freshly ground black pepper
  • Fresh vegetables for topping (lettuce, tomato)

Instructions

  1. Prepare the quick pickles by slicing cucumbers and salting them to draw out moisture. Mix vinegar, lime zest and juice, cumin, garlic powder, and smoked salt; pour over cucumbers after they’ve drained.
  2. In a bowl, combine Mexican chicken sausage, ground chicken, grated onion, garlic, and black pepper; mix gently to form patties.
  3. Refrigerate patties for at least an hour before grilling. Preheat grill to 450°F then reduce to 350°F; cook patties for about 6 minutes per side until internal temperature reaches 165°F.
