  • ¾ cup finely diced red bell pepper

  • 2 large hard-boiled eggs, finely diced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red apple vinegar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook macaroni noodles in salted boiling water until al dente. Drain and rinse under cold water; toss with olive oil.
  2. In a large mixing bowl, combine cooked macaroni with gherkins, bell pepper, celery, red onion, and hard-boiled eggs.
  3. In another bowl, whisk together mayonnaise, sour cream, pickle juice, vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
  4. Pour dressing over the macaroni mixture and gently toss to coat evenly.
  5. Cover and refrigerate for at least 1 hour before serving.
