Ingredients

  • 5 ears of corn (or ~4 cups frozen/canned)
  • ½ cup diced onion (red or white)
  • 2 tablespoons minced parsley
  • 3 Roma tomatoes (seeded and diced)
  • Salt and pepper (to taste)
  • ¼ cup olive oil
  • ¼ cup red apple vinegar
  • 1 minced garlic clove

Instructions

  1. In a small bowl, whisk together olive oil, red apple vinegar, and minced garlic. Set aside.
  2. Boil salted water in a large pot. Cook corn for 3-4 minutes until tender. Drain and cool slightly.
  3. Cut kernels off the cob and place in a mixing bowl. Add diced tomatoes, onion, parsley, and dressing; toss gently to combine.
  4. Season with salt and pepper to taste. Chill before serving if desired.
