  • 1 15-oz can red kidney beans, drained & rinsed
  • 1 15-oz can pinto beans, drained & rinsed
  • 1 15-oz can white beans, drained & rinsed
  • 28 oz crushed tomatoes
  • 10 oz diced tomatoes with green chiles
  • 1/2 cup onion, diced
  • 1 bell pepper, diced
  • 1 cup corn, fresh or frozen
  • 2 garlic cloves, minced
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 1 1/2 tsp salt
  • 1 1/2 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp black pepper

Instructions

  1. Rinse and drain the canned beans.
  2. Dice the onion and bell pepper; mince the garlic.
  3. Combine all ingredients in the crockpot: beans, crushed tomatoes, diced tomatoes, onion, bell pepper, corn, garlic, and spices.
  4. Stir well to mix everything evenly.
  5. Cover and cook on LOW for 3 hours or HIGH for 1.5–2 hours, stirring halfway through.
  6. Taste and adjust seasoning as needed before serving.
