  • 3 tablespoons extra-virgin olive oil
  • 1/2 cup yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 teaspoons salt
  • 10 ounces cherry tomatoes (halved)
  • 4 cups fresh spinach
  • 1 cup 2% milk
  • 1/2 cup grated parmesan cheese

Instructions

  1. Boil water in a large pot and cook the short cut pasta according to package instructions until al dente.
  2. In a skillet, heat the olive oil over medium heat, then sauté the diced onion, minced garlic, and salt for about 3 minutes until softened.
  3. Stir in the halved cherry tomatoes and cook for another 3-5 minutes until soft.
  4. Add the fresh spinach to the skillet, cooking until wilted (about 3 minutes).

  6. Drain the cooked pasta using a colander and toss it into the skillet with the sauce.
