  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 2 cups coconut milk
  • 1 cup glutinous rice flour
  • 1 tablespoon cornstarch (for mochi dough)
  • 1 cup crushed vanilla cookies (for coating)

Instructions

  1. For the custard filling, whisk together egg yolks, sugar, and cornstarch in a saucepan. Gradually add milk while whisking continuously. Cook over low heat until thickened, then stir in butter and vanilla extract. Refrigerate until chilled.
  2. For the mochi dough, combine glutinous rice flour, sugar, and cornstarch in a bowl. Gradually add water to form a sticky dough. Steam or microwave until cooked through. Allow to cool slightly.
  3. Dust hands with cornstarch. Flatten pieces of mochi dough, fill with chilled custard, and seal completely. Roll in crushed vanilla cookies for added texture.
  4. Refrigerate assembled mochi balls for at least one hour before serving.
