Ingredients

Scale
  • 1/2 cup unsalted butter (1 stick, melted)
  • 1 large egg
  • 1 cup light brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 2 to 3 teaspoons cinnamon (adjust to taste)
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt (or to taste)
  • 6 ounces cream cheese (softened)
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt (or to taste)
  • cinnamon (for garnishing)

Instructions

  1. Preheat your oven to 350°F. Line an 8×8-inch baking pan with aluminum foil and spray it with cooking spray to prevent sticking.
  2. In a large microwave-safe bowl, add the melted butter and heat it until fully melted, about 1 minute on high power.
  3. Allow the melted butter to cool slightly before adding: Add the egg, brown sugar, vanilla extract, and cinnamon. Whisk until smooth.
  4. Add the flour and salt into the mixture: Stir until just combined; do not overmix.
  5. Pour the batter into your prepared pan: Smooth out the top with a spatula as needed. Bake for about 20 to 24 minutes until set in the center. A toothpick should come out clean or with a few moist crumbs.
  6. While blondies cool: In a large bowl or stand mixer, combine cream cheese, softened butter, confectioners’ sugar, vanilla extract, and salt. Beat until light and fluffy (about 2-3 minutes).
  7. Once cooled: Spread frosting evenly over blondies using a spatula or knife. You may have some frosting left over if you prefer less.
  8. Sprinkle cinnamon over the frosted bars: Slice into squares and serve. Store leftovers airtight at room temperature for up to 4 days or in the fridge for up to one week.
