- 8 oz bow tie pasta
- 1.5 cups corn kernels
- 1.5 cups cherry tomatoes

- 2 Tbsp fresh cilantro
- 1–2 avocados
- 0.5 cup plain Greek yogurt
- 0.25 cup fresh lime juice
- 2 cloves garlic
- 0.5 tsp salt
- 0.125 tsp cayenne
Instructions
- Cook the bow tie pasta in salted boiling water until al dente; drain and rinse with cold water.
- While the pasta cools, chop the red onion, halve the cherry tomatoes, and dice the avocados.
- In a mixing bowl, whisk together Greek yogurt, lime juice, minced garlic, chopped cilantro, salt, and cayenne pepper until smooth.
