- 1 small cantaloupe
- 1 small honeydew melon
- 1 cup ciliegine mozzarella
- 1/4 cup fresh basil, chopped
- 3 ounces turkey slices
- 1 cup cherry tomatoes, halved
- 1/4 cup pineapple vinegar
- 1/4 cup olive oil
- Fresh cracked pepper and sea salt to taste
Instructions
- Cut the cantaloupe and honeydew melons in half and scoop out small balls using a melon baller.
- In a large bowl, combine the melon balls, ciliegine mozzarella, chopped basil, turkey slices, and cherry tomatoes. Gently toss until well mixed.
- In a separate bowl, whisk together the pineapple vinegar and olive oil; season with salt and pepper.
- Pour the dressing over the salad mixture and toss gently until evenly coated.
- Chill in the refrigerator until ready to serve.
