  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda

  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries
  • For the cream cheese filling: 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, milk, eggs, and vanilla extract. Gradually combine with dry ingredients until just mixed.
  4. Gently fold in blueberries.
  5. For the cream cheese filling, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
  6. In a lined muffin tin, fill each cup with one tablespoon of batter, add one teaspoon of cream cheese filling on top, then cover with another tablespoon of batter.
  7. Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
  8. Cool for five minutes in the tin before transferring to a wire rack.
