- 1 1/2 cups fresh blueberries
- For the cream cheese filling: 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix melted butter, milk, eggs, and vanilla extract. Gradually combine with dry ingredients until just mixed.
- Gently fold in blueberries.
- For the cream cheese filling, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- In a lined muffin tin, fill each cup with one tablespoon of batter, add one teaspoon of cream cheese filling on top, then cover with another tablespoon of batter.
- Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
- Cool for five minutes in the tin before transferring to a wire rack.
