Ingredients
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup unsalted butter (cold and cubed)
- 2 cups fresh blackberries (or raspberries/blueberries)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1/2 cup light brown sugar (or granulated sugar)
- 1 teaspoon baking powder
- 1 cup shelled unsalted pistachios
- 1 large egg
- 1 teaspoon vanilla extract
- 1 large egg yolk (do not use the whole egg)
- 2–4 tablespoons ice water (use cold water)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish.
- For the crust, mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Stir in egg yolk and add ice water to form dough. Press into the baking dish.
- Pre-bake the crust for about 15 minutes until lightly golden.
- In another bowl, combine blackberries, sugar, lemon juice, and cornstarch. Pour over the crust.
- For the topping, mix brown sugar, baking powder, chopped pistachios, cold butter cubes, egg, and vanilla extract until crumbly. Sprinkle over the blackberry filling.
- Bake for an additional 30–35 minutes until topping is golden brown.
