  • 1/2 cup unsalted butter (cold and cubed)
  • 2 cups fresh blackberries (or raspberries/blueberries)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1/2 cup light brown sugar (or granulated sugar)
  • 1 teaspoon baking powder
  • 1 cup shelled unsalted pistachios
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 large egg yolk (do not use the whole egg)
  • 24 tablespoons ice water (use cold water)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish.
  2. For the crust, mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Stir in egg yolk and add ice water to form dough. Press into the baking dish.
  3. Pre-bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, combine blackberries, sugar, lemon juice, and cornstarch. Pour over the crust.
  5. For the topping, mix brown sugar, baking powder, chopped pistachios, cold butter cubes, egg, and vanilla extract until crumbly. Sprinkle over the blackberry filling.
  6. Bake for an additional 30–35 minutes until topping is golden brown.
  7. Allow to cool completely before cutting into squares.
